Dinner for 2 with leftovers. Ready to serve in 30 minutes.
A quick and easy meal that's full of tasty goodness. Ideal to warm the belly on a cold night.
INGREDIENTS:
400g Mince (Ground Beef)
2 Large Carrots
1 Small Onion
1 tsp Salt
4 Grinds Pepper
2 tsp Cornflour, heaped
1/2 Cup Water plus enough to cover mince
2 Oxo Cubes OR
2 tsp Beef Stock, heaped
1/2 Kumara (Sweet Potato)
You can add any sort of vegetables to the mince to bulk it out a bit and make it go further. It's also an excellent way to get your daily dose of vegetables.
4 Medium Potatoes
Splash Milk
2 Large Knobs of Butter
Salt and pepper to taste
2 Cups Frozen Vegetables
METHOD:
1. Put mince in a large pot. Peel and chop carrots, onions and sweet potato. Add to the mince. Add pepper and salt to taste.
2. Cook on high and brown the mince till all the liquid evaporates. Cook a further 2 minutes, stirring so as not to stick and burn on the bottom.
3. While you're waiting for the mince to brown, peel and chop potatoes and put into a pot. Cover with water and add 1 tsp of salt. Turn on high till it starts boiling then turn down to a simmer.
4. Add enough water to cover mince. Crush and add the oxo cubes or beef stock and bring back to the boil. Turn down to simmer away gently.
5. Put your frozen veges in a pot and cover with water. Add 1 tsp of salt. Bring to the boil then turn down to simmer.
6. Add the cornflour to 1/2 Cup of water and mix. Add to the mince a bit at a time till you have the required consistency.
MASH THE SPUDS!
7. Drain the potatoes and let steam while you get the butter and milk.
8. Add butter and pepper to taste. Mash with a potato masher or fork if you don't have one. If it's too thick and you want it more creamy...er then just add a splash of milk... or more butter!!!
9. Drain the peas.
10. Aaaaaand.... SERVE!
Congratulations if you'e made it this far and are about ready to sit down to a delicious and nourishing home cooked meal that's easy as and quick to do from start to finish. Enjoy!
